These Long and Slow Apples by Dorie Greenspan make a delightful. fruity dessert that are so easy to make.  I’ve made them many times since this assignment as I like them for breakfast with a dollop of plain greek yogurt on top.

Two hours to bake
In the tiny little cups
Small,  smashed, elegant.

Dorista revolt!
instructions said do it but
cellophane cooking?

But, it is a hit.

Celery Root Puree
Celery root puree is the type of side dish that changes your life.  Once you learn how to make it you will be serving it time and time again instead of mashed potatoes.  Everyone will ask you what “what is this” and they will oooh and ahh when you tell them.  Celery root puree will become your signature side dish and you will be ‘famous’ for it.

  3. Very good decision to avoid the unpoplular Shrimp & Cellophane Noodles this week! We loved the apples and I need to make up the Celery Root Puree. Well, the February recipes are looking better, so fingers crossed!

  6. What kind of meat is lurking behind your celery root puree??, that plate looks good!!!!
    I’m making both the celery root puree and the slow baked apples, sans saran wrap-everything on your blog looks good and inspires me to cook my way through AMFT, that’s for sure!

  8. I am going to quickly comment on this Post, Trevor, because I am anxious to get to the Black Manhattans (never heard of that drink). First, I agree that Apples Long and Slow was a wonderful recipe. Lousy name. Élégant dessert. If you remember, I served my celery purée with Lobster Pot Pie on Christmas Day. You are right – that mashed potato substitute goes with anything. Your mystery meat looks delicious. We didn’t have leftovers but glad to know they are tasty. Would like to try patties – love mashed potato patties. As for this week’s wok recipe, take a pass. Seriously. Now, on to the Black Manhattans.
